Homemade Granola

Last year I went on a search for a delicious homemade granola bar recipe and instead ended up creating granola. Two granola bar recipes, two friend recipe recommendations, nearly one hundred test batches and plenty of taster input adjustments later, we are happy to share our creation!

Homemade Granola

(Makes about 6 cups of granola)

3 cups dry oats

1 cup pistachios, can substitute any nut

1 cup coconut flakes, unsweetened 

3 Tablespoons chia seeds

3 Tablespoons pumpkin seeds, can substitute any seed

1 teaspoon salt

1/4 cup brown sugar

1/4 cup maple syrup

1/4 cup coconut oil

3 Tablespoons olive oil

1 cup dried cranberries, can substitute any dried fruit

Preheat oven to 300. Line baking sheet with parchment paper.

In a large mixing bowl, combine oats, pistachios, coconut flakes, chia seeds and pumpkin seeds.

In a small saucepan, add salt, brown sugar, maple syrup, coconut oil, olive oil. Stir to combine and bring to a boil. Remove from heat, pour cooked mixture into the large bowl of dry ingredients. Stir to combine.

Spread mixture evenly onto the baking sheet. Bake for 40 minutes until golden brown. Mix dried cranberries in with the hot granola on baking sheet and let cool for 15 minutes.
